Kike’s Red Tacos started in 2021 as a food truck operation focused on serving up their now well-known birria in tacos, burritos, quesadillas, tortas, and even ramen bowls. Word spread fast and they quickly made a name for themselves. Kike’s won The Denver Post’s March Madness Taco Bracket 2022 beating out 31 other local taco shops. The story of how they started is one that will warm your heart—choosing to start this food truck business instead of buying a home. It takes eight hours to cook the birria using dozens of spices with the protected family recipe.
